Q: Why do you only deliver to this area?
Our entire objective is to bring you the freshest coffee possible, at the best price possible. We are a small two person team, but we maintain commitment to our principles. We roast once per week, and deliver that coffee the very next day. This eliminates the need for continuous production, warehousing the coffee, and on demand logistics. For a small roastery this means we are eliminating waste, always delivering fresh coffee, and saving you money on shipping.
Q: When do you deliver?
We roast coffee every Saturday, which means we deliver coffee every Sunday.
Q: Why must I pay by e-transfer?
Online merchant services like Stripe and Square take up to a 5% fee, and we would just rather you keep that money instead. These companies prioritize large corporations with high volume, not small businesses like ours. E-transfer is a free and simple method of supporting a Canadian business with your dollar, as we have done for generations. If your online banking situation doesn't include free e-transfers, please reach out to us here!

Q: How fresh is fresh?
24 hours fresh. When you taste the difference, we think you'll get it. Flavour and aroma of coffee beans begins to rapidly decline in the days after it was roasted, just like any other food or beverage. Visit our blog if you want to nerd-out about coffee science with us!
Q: Is fresh really best?
In our personal experience roasting and testing our own coffee, we find the 'freshly roasted' flavour notes to be charming and preferred. Some people do not prefer it this way, and different beans will yield different results, as will different roast profiles. The beauty in our method is that you get to decide what period of resting time is ideal for you. As an experiment, you can brew a cup of our coffee each day and make note of how the flavour changes over time. You may find you prefer a few day's rest, or you may find you prefer it after just the initial 24 hour resting period. You may just enjoy the process, as the coffee develops over time and shows you all of the flavours it's capable of producing. There is usually no right or wrong answer with a measure so subjective.
Q: Is pre ground coffee a waste?
Certainly not; a coffee that you enjoy will always be superior to most others, even if it was ground several days ago. However, grinding before you brew is the most accessible method of (drastically) improving your at-home brew. There are affordable burr grinders in today's era, and even a cheap blade grinder can improve your cup with the right approach. It is our recommendation to buy whole bean coffee and grind the beans at home right before you brew.
Q: Why is there a valve on my bag of coffee?
The valve near the top of the bag, commonly mistaken for a vacuum port, is a one way valve that lets gasses escape from inside the package. Roasted coffee, especially when fresh, is constantly releasing small amounts of CO₂ from inside the beans due to the reactions that took place during roasting. The valve lets CO₂ escape, while preventing atmosphere from entering. This valve is essential for sealed packages of coffee, or else the bag would eventually burst! It also creates a natural preservative environment for your coffee, as the CO₂ displaces the oxygen-rich atmosphere inside the package it reduces the rate of oxidation, and preserves flavour and aroma.
Q: How should I store my coffee?
While rosted coffee is an extremely shelf stable product, it quickly loses flavour and aroma in the weeks after being roasted; however there are some best practices to note. We recommend taking advantage of our free delivery and keeping a fresh bag in the house over ordering in bulk. Coffee also begins to stale quickly after being ground, so we recommend grinding the coffee immediately before brewing. Keep your coffee (beans or grounds) away from heat, moisture, and open air, and our bags come with a resealable zipper. Some coffee enjoyers, when storing for longer periods of time, will keep their coffee sealed and in the freezer to preserve its flavour. While none of these steps are necessary, they will preserve some quality, especially for ground coffee.
